Three large leeks, cut lengthwise down the middle and then thin chopped
5-6 large potatoes, cut into thumb sized cubes - peel before chopping
4-6 carrots cut into thumb width wheels
1 large onion slice thinly
3 cloves garlic, minced

take your garlic, onion and leeks; and put them in a hot soup pot with some olive oil. just a quick sear here, no need to give them too much colour or caramelize them. add some salt and pepper. Thyme and rosemary and other spices are up to you. Add a litre of water or prepared soup stock, plus carrots and potatoes. top with water. bring to a rolling boil and then turn to simmer for an hour.

Chopped up chicken is a great addition in the onion and leak searing phase, adding flavour as well as low fat protein. Add other veggies if you like, this is just the basic and classic version.
